Unfortunately I have checked out what images I could find of Stylidiums and although the idea is similar, none of them resemble the type of plant I remember.
This plant was more of a bush than a grass and the bottom 'lip' of the flower was singular. When the petal retracted, it would curl up tightly on itself.
If I were still in WA I'd take a trip there from where I remembered seeing it, as it is soon to be flowering season there, that is if the plant still exists after all this time?!?

Your plant could possibly be a Stylidium. Something like a donkey orchid with two petals up and two down.When an insect lands on them a small "trigger"springs across to gather pollen.
